Formerly called Bunda, Suibara-machi, Kitakanbara-gun, about 6 kilometers south of JR Suibara Station. This place is the starting point of “TSUKANO SHUZO” where the first head of the TSUKANO family, Jozaemon Yoshiteru Tsukano opened a shop named “Kawachi-ya”, Kawachi shop before Jinya, manor house and started brewing sake in 1781. Meanwhile, “KOSHI SHUZO” started sake business at Shimami, former Toyosaka city in 1987, where they used to brew and sell only special designation sake such as Daiginjo-shu, Ginjo-shu, and Junmai-shu. KOSHI SHUZO’s great accomplishment was that since the following autumn of its foundation it continued to win a prize at the Kanto-Shinetsu Sake Awards (held by the Kanto-Shinetsu Regional Taxation Bureau of the National Tax Agency of Japan) consecutively 17 times from the 47th till the 63rd.
These two companies, one of which took pride in their tradition, the other in the techniques of sake production merged in November in 1996 to become “KOSHITSUKANO SHUZO” and started to produce sake and sell it in Suibarabunda. We won the Gold medal at the 85th Annual Japan Sake Awards in 1997.

Thank you very much for your interest in Saka-Gura of KOSHITSUKANO SHUZO. I am Ryoichi Tanaka, Toji of KOSHITSUKANO SHUZO, and have been engaged in producing sake for about 40 years. KOSHITSUKANO SHUZO was originally founded in 1781 and has been producing sake for about 240 years.

The characteristics of KOSHITSUKANO SHUZO is that we use our own yeast, Tsukano Yeast to brew our sake, while many other breweries commonly use Yeast No.7 or No.9 with gorgeous and sweet aroma which are widely regarded as suitable for brewing Ginjo-shu and ordinary sake. Our Tsukano Yeast gives a mild and fruity flavor to our sake. Concerning other ingredients, we use water from the underground stream of Agano River, and as for rice, we use Gohyakumangoku and Koshiiguki harvested in Niigata.

Our motto is “Harmony creates good sake.” As sake is a living thing, if we feel irritated, it can feel our irritation and its taste deteriorates. When we keep our minds in harmony, we can make good sake. Therefore, we always try to keep our motto in our mind.

From now on, I think I should initiate young workers in the techniques of sake production. I expect them not simply to learn how to produce sake, but to keep good relationship with others and to make continuous efforts to produce good sake so that their sake will be able to make our customers say, “This tastes delicious!”
